This is a great meal when you want something fresh, light, and tasty. You can use whichever gluten-free noodles (buckwheat soba, quinoa) you prefer.

Prep Time: 10 minutes Total Time: 50 minutes Serves 2

1 1/2 c pumpkin, cut into 1" cubes 1 1/2 Tbsp coconut or macadamia oil 3 1/2 oz gluten-free noodles 6 asparagus spears, cut into 2" pieces 1/2" piece ginger, thinly sliced 2 cloves garlic, thinly sliced 1/2 lb tiger shrimp, peeled and deveined 4 Tbsp fresh lime juice (about 2 limes) 1 Tbsp tamari 1 spring onion, thinly sliced 1 small red chile, thinly sliced

1. Heat oven to 375º F. Place pumpkin and 1/2 Tbsp of the oil on a baking sheet. Toss and cook until tender, 25 to 30 minutes. 2. Prepare noodles according to the package directions. Drain and set aside. 3. Heat remaining 1 Tbsp oil in skillet over medium-low heat and sauté asparagus, ginger, and garlic 1 minute. Add shrimp and cook, tossing occasionally until shrimp are cooked through, 4 to 5 minutes. 4. Combine lime juice, tamari, cooked noodles, and cooked pumpkin in large bowl. Top with shrimp mixture and toss well to coat. Serve and garnish with onion and chile.
